'Sofrito' Cooking Base

I make highly flavourful cooking bases and store to save time when cooking in future and it also saves money because I can buy in bulk. Also the more it stays in storage the better the flavour gets. It also enables me to use the more strongly flavoured parts of the plants that would overpower a meal by 'equalizing' its taste. I don't make it with salt as it is a 'beginner' mix that will go in another meal so it is easier to season.

Fry the onions, garlic, ginger, dhania, and celery in the oil until well wilted.

Add the spices and soy sauce, cook for a bit, then deglaze with a little water.

Add the chopped tomatoes.

Cook until tomatoes are broken down.

Use the 'sofrito' to start off delicious meals like this pea and potato stew.
