Super Spicy Patatas Bravas
This is probably my favorite brava sauce. It's my homemade version inspired by the sauce from one of the legendary taverns in Ferrol, O Cabazo. After many tries, I've come up with a flavor that's very similar and just as good! Spicy, spicy...

Heat the olive oil in a saucepan. Once hot, add the flour and stir constantly to toast it.

Add the smoked paprika and hot paprika, stirring quickly so they don't burn. Next, add the tablespoon of vinegar and stir well, letting it reduce for a couple of minutes.

Pour in the cup of water and bring to a boil, stirring constantly. Add the finely chopped red pepper flakes and simmer on very low heat for 10 minutes.

Remove from heat, add the ketchup, and stir well to combine. Set aside.

Meanwhile, peel and roughly chop the potatoes. Fry them in plenty of hot oil until golden brown. Remove and place on paper towels, season with salt to taste, and arrange on a serving dish.

Top the potatoes with the brava sauce and serve.
