#karela is bitter but known to have theupertrical values specially for diabetics. When tomatoes are mixed in it's bitterness is reduced. It helps in maintaining blood sugar levels, lower baad cholesterol, helps in weight loss, boosts immune system. Good for eyes, skin and lustrous hair.

Steps

Peel karela. Slit it from centre. Coat it's centre with salt. Sprinkle salt on peel also. Keep aside for 4 hours. After 4 hours, wash it in running water for 4 times and squeeze it each time to remove it's bitterness.

Hear cooking oil in a wok. Put whole karela in it and shallow fry on low flame.

Peel wash and Chop onion, tomatoes.

Flip the sides of karela of and on till they turn golden brown.

When all the karela are done remove it in a bowl.

Now in this karahi add karela peel in remaining cooking oil and saute for 5-7 minutes. Now Add chopped onions, salt, red chilli powder, turmeric powder, garam masala, coriander & fennel seeds powder, mango powder and mix well.

Add grated tomato puree. Sauté till oil leaves the karahi. Now add whole green chillis and shallow fried karelas and toss it gently so thar karela absorbs tomatoes and become soft.

Now switch off the flame. Fill that karela peel in whole karela slit. Serve hot with chapatti.
