Ingredients

  1. 1side salmon
  2. 2lemons, cut in half
  3. Pinchsalt
  4. 1 Told bay seasoning
  5. 1/2 CPanko (you can use almond flour)
  6. 2scallions, chopped fine
  7. 1/4-1/2 Cmayonnaise
  8. 1/2 stickbutter, melted
  9. 1/4 Cmilk
  10. 1/4 Clemon juice
  11. 1 TDijon mustard
  12. 2eggs
  13. 1 tspsalt
  14. 1 tspwhite pepper
  15. Fresh thyme
  16. 2 Tolive oil

    Preheat oven to 350°.

    In a large pot of water add 1T salt, the juice of 2 lemons, the lemons and 1T old bay; bring to a boil and then turn down to simmer. Add the salmon and poach for 10 minutes. Take out of the water and cool, then remove from the skin and shred.

    In a large bowl, combine the salmon and all other ingredients except olive oil. Mix into a paste-like mixture. Form into patties.

    Heat the oil in a skillet on medium. Brown both sides of patties and then put into the oven for 5-10 minutes. Delicious!
