  3. 1/4 cupgranulated sugar
  4. 1 teaspoonground cinnamon
  5. 2 tablespoonslemon juice
  6. 1 tablespooncornstarch
  7. For the Streusel Topping
  8. 2 1/4 cupsall purpose flour
  9. 2/3 cupbrown sugar
  10. 2/3 cupgranulated sugar
  11. 2/3 cupsold fashioned oats
  12. pinchsalt
  13. 3/4 cupsbutter, melted

Cooking Instructions

  1. 1

Preheat oven to 350 degrees. Spray the wells of a standard size muffin tin with nonstick spray. Roll out dough onto a lightly floured surface, and cut out circles about 2 inches in diameter. Gather and re-roll unused dough and cut additional circles. use the rim of a small plastic cup. Place the circles in the bottom of each muffin well.

  2. 2

Add the apples, sugar, cinnamon, lemon juice, and cornstarch to a medium saucepan. Cook on medium heat, stirring occasionally for about 5-10 minutes until the apples have softened slightly and the juices begin to thicken. Remove from heat.

  3. 3

Add about one tablespoon of the apple filling on top of each circle of pie dough.

  4. 4

In a medium bowl, mix flour, brown sugar, granulated sugar, oats, and salt. Add melted butter and mix until well incorporated.

  5. 5

Add a heaping tablespoon of the streusel topping to each muffin well, and gently pat it down over the apples.

  6. 6

Cook about 20-25 minutes until crumbs are cruncy

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
