Crack the eggs in a clean bowl, slice the onions, add spices, seasoning & curry, whisk, add grated scotch bonnet & onion, add chopped green beans & stir.

Peel the potatoes, wash & dice, add water, set on flame & boil until soft, add the potato to egg mixture, mix all together.

Grease the non stick pan with vegetable oil, pour the mixture in it & set on flame at low heat close it & allow it for about 10mins.
