I've been making this mushroom pie recipe for many years. I learned it from a friend in Paros, where I was vacationing. I was so thrilled with its taste that I absolutely had to ask her for the recipe! It is now a staple at every festive and non-festive table of ours! Mix all the dough ingredients and knead. Let it rest in the refrigerator for an hour, wrapped in plastic wrap.

Meanwhile, prepare the filling. Blanch the mushrooms for a few minutes, finely chopped, either alone to release their juices or in 1-2 tablespoons of well-heated olive oil. Add a pinch of oregano.

In another pot, sauté the bacon with the onion, add the finely chopped turkey, and finally the cream. Add the mushrooms to this mixture and stir.

Roll out the dough into a thick sheet and place it at the bottom of a greased 14.5x10.5 inch baking dish. Spread the mushroom filling on top, cover with the Gouda slices, and bake at 390°F for 20-30 minutes.
