Red Lentil with Ham Soup

Another gammon joint this morning, so more ham stock available. ( Never pass up on the chance to make stock as a by-product of your cooking:#WastenotWantnot ) This is a development of my earlier Quick & Easy Red Lentil Soup, with more ham and slightly different vegetables.
It’s particularly nourishing in the winter but welcome all year round. The photo is taking before whizzing to show its “natural” consistency.

Steps

Put all the ingredients except the pepper into a saucepan and bring to the boil, stirring to avoid sticking. Reduce heat and simmer for 25 minutes, stirring occasionally.

Taste and season with pepper as wished. Do not add salt.

Whizz in a blender to desired consistency or leave as is, as preferred.

Serve piping hot with granary bread or crusty roll.
