Ingredients

45 minutes
4 servings
  • 4 cupsorganic yellow potatoes (cubed)
  • 1 poundground bison
  • 1 1/2 cupsfrozen carrots
  • 1 1/2 cupsfrozen peas
  • 1 1/2 tablespoonscurry
  • 1/4 cupbeef broth
  • 1/3 cupalmond milk
  • Salt
  • Pepper
  • Olive oil

Steps

45 minutes
  1. 1

    Cube and boil the potatoes in salted water until soft, drain, then mix with almond milk and pepper to taste

  2. 2

    While potatoes are boiling, coat a pan with olive oil and bring to medium heat before adding bison, carrots and peas. Salt and pepper to taste.

  3. 3

    Once the meat is brown, add beef broth and curry powder, cook and stir until broth has reduced.

  4. 4

    Serve bison mixture over mashed potatoes
