Homemade Crispy French Fries

You can never go wrong with potatoes as a side dish and French Fries is the most popular & delicious snack among them.
These Homemade, Super Crispy & Delectable fries are way better than what you would get at a restaurant.
They are fun and easy to make at home with some "secret Tips".
The only thing, you have to plan ahead (Say a day before) if you want the perfect homemade french fries.
The Recipe starts with slicing the potatoes into strips, then soaked in Ice cold water. The water helps to remove any excess starch to make the fries crispy[TIP1]. Coat the sticks with some Cornflour(but no salt) and freeze it to get the extra crispness after frying[TIP2]. Then it is fried twice, first at a lower temperature, then at a higher temperature to get rid of moisture completely[TIP3].
Sprinkle with salt, pepper or your favourite seasoning then serve hot with ketchup and enjoy!
Note: Don't take new potatoes, it'll have extra moisture.
P.S. I have tried few of other recipes as well but the one with following steps works best.

Peel, wash & slice the Potatoes into thin long strips. Soak Potato sticks in Cold Water for at least 1 hr in fridge. (Longer, the crispier fries, I soaked overnight in the fridge).

Drain & pat them dry between clean kitchen towel/napkin (They shouldn't be any water left).

Transfer them into a big bowl, Sprinkle some Cornflour(no salt), stir to coat each stick properly. Now put the lid & keep in freezer for at least 30 mins. Or take out only when you want to fry, like I fried later after 8 hours.

Take out from freezer and directly deep Fry in hot oil on Medium flame first for 5-6 mins. Let it cool down at room temp (meantime you can do next batches).

Again fry at High flame till crisp & golden.

Sprinkle immediately with salt and pepper/seasonings. Serve hot with ketchup!
