Sweet Spiced Chicken Liver in Dark Soy Sauce

Prepare all ingredients. Clean chicken livers. Place in a pot, cover with water, add a good pinch of salt, ground white pepper, 1 or 2 crushed garlic, ginger slices and 1 small stalk of bruised lemongrass. Bring to a rolling boil and keep boiling until the liver is fully cooked. Then, drain the water and discard the spices. keep aside.
Gather and prep the rest of the ingredients.

Sauté B until fragrant. Add in A (chicken liver) and stir for a minute or two over medium low heat. Next, season with C. Adjust seasoning accordingly. Add few more tbsp of water if necessary for some extra gravy/sauce (opt). Stir to evenly coat the liver and cook for a minute or two until the sauce is lightly thicken. Remove from the heat.

Garnish and serve with warm white rice. Note: You can add few types of sliced capsicum to add colour to your dish. Add at the end of your cooking so you ll hv. crunchy capsicum. Drizzle sesame oil. Stir and remove from the heat. Serve immediately.
