This is a Japanese traditional bikkuri daki (びっくり炊き) way to cook brown rice quick and easy without any soaking time. Bikkuri daki method has been used in Japan since the Edo period.

This is a Japanese traditional bikkuri daki (びっくり炊き) way to cook brown rice quick and easy without any soaking time. Bikkuri daki method has been used in Japan since the Edo period.

Wash the measured brown rice and drain.

Add washed rice into a pan and add water. If you are using old rice, use more water.

Bring it to boil. Stire the rice a couple of times and put the lid on. Then, simmer for 10-15 mins until the water almost disappears. For my induction cooker whose lowest setting does not get quite low enough, it takes about 10 mins, so I set it as 10 mins timer, but if your cooker has lower heart, it would take longer

Add 100ml of cold water (Bikkuri Mizu びっくり水 or surprise water). You can adjust the amount of the water according to your taste: more water to make it softer and less water to make them harder.

Stir it a couple of times and simmer for 10 mines with a lid on. And leave another 10 mins to rest without disturbing. So, I usually set the induction cooker timer as 10 mins with the lowest heat and set another timer for 20 mins which tells me when it is ready.
