Due to our hectic hospital duties, it is many times not possible to go out to buy veggies. So made this tasty curry today. Though we have used here minimal ingredients, this curry really tastes yum.

Due to our hectic hospital duties, it is many times not possible to go out to buy veggies. So made this tasty curry today. Though we have used here minimal ingredients, this curry really tastes yum.
Steps

Heat oil in a kadai. Add mustard. When it splutters add jeera, haldi, red chilli powder,greenchillies and curry leaves

Now add chopped onions. Saute for a minute.

To this addd chopped tomatoes. saute for 2min. Add 1/2 cup of hot water and cover it with a lid. Let the tomatoes cook for 5min.

Now remove the lid. Add masala, salt, groundnut powder, and jaggery. Mix well. Let the curry for 2 mins.

Switch off the flame. Garnish with coriander and serve hot with chapati.
