I always make this recipe when I need something quick—it's a complete meal that doesn't cost much.

Season the chicken with salt and pepper, add the soy sauce and bay leaves, then rub in the orange juice and V8 vegetable juice. Mix well and let it marinate for 15 minutes. Meanwhile, wash and chop the vegetables.

Place the chicken on the stove over low heat for 20 minutes. Then add the potatoes and carrots, cook for 15 minutes, add the zucchini, and cook uncovered for another 5 to 10 minutes.

Taste and adjust salt if needed, and it's ready. Note: You can use chicken pieces or breast chunks, and you can also add a few slices of onion. I skipped the onion this time because I was in a hurry.
