Scrambled Tofu (eggs) on toast

I’m becoming a big fan of tofu, as long as it’s seasoned well.
This dish replaces egg with the tofu and gently seasoned with turmeric, salt and pepper . I’ve added sliced spring onions for a contrasting crunch.
This really is a simple dish that doesn’t need measurements, you can even add curry powder to zing it up a bit.

Get rid of any excess water from the tofu, crumble it up in a bowl. Add turmeric, salt and pepper. Add a knob of butter to your frying pan and when it starts frothing add your spring onions and tofu. Warm through but still maintain the crunch of the onions.

Serve on a warm plate with buttered toast and a sprinkle of fresh parsley. SIMPLE 😉
