just had this dish for a quick supper. doubled the egg quantity to serve 2 and also added a tsp of ground cumin to the onion, garlic and chilli mix at the start. lovely! :-)

Ingredients

  1. 1 tbspolive oil
  2. 1 mediumonion (finely chopped)
  3. 1/2 mediumred chilli (finely chopped), or
  4. 1/2 tspdried chilli flakes if no fresh chilli available
  5. 1garlic clove (finely chopped)
  6. 1 tspbutter
  7. 3eggs (beaten)
  8. 1 dashmilk
  9. 1salt & pepper to taste
  10. 1 tbspchopped coriander
  11. 2 slicetoast

Cooking Instructions

    add oil to frying pan and heat over medium heat.

  2. 2

    add onion and chilli to pan, and saute until softened. Add the garlic after 20 seconds to prevent it burning. Try not to brown the onion.

    mix eggs and milk in a bowl or jug.

  4. 4

    Add the butter and once melted, add the eggs. mix well in the pan with a wooden spoon and allow to 'scramble'.

  5. 5

    Add the coriander and salt & pepper to taste.

  6. 6

    once cooked to your desired consistency, serve on two slices of toast.
