Amti (Maharashtrian Spiced Lentil Curry)

Amti is a tangy and flavorful curry from Maharashtra, traditionally served with puran poli. Whenever puran poli is made for a festival, amti is also prepared using a couple of tablespoons of the cooked chana dal set aside from making the puran. Spices are added to this dal to make a deliciously tangy amti (also called kshar).

Slice the onions lengthwise and sauté them until golden brown. Then, in a blender jar, grind the sautéed onions with the ginger-garlic-cumin paste. Add a little water to the cooked dal and mix well with a spoon.

Heat 2 tablespoons oil in a pan. Add the ground masala and cook until it turns light pink. Add the dried fenugreek leaves. Add salt, chili powder, and the rest of the spices, and mix well with a spoon.

Add the mashed dal to the pan.

Add water as needed—about 1 cup (240 ml), but do not add too much. Let it cook for 5 minutes.

Your hot amti (kshar) is ready. It tastes great served with rice.
