Soak the dried longan in water for about 1 hour until softened.

Rinse the lotus seeds thoroughly. Add 2 cups water (about 500 ml) and cook until just tender. Add rock sugar and continue cooking until the lotus seeds are soft and sweet. Turn off the heat and transfer the lotus seeds to a bowl.

Stuff the lotus seeds into the softened longan until all are filled.

Add more water to the pot and bring to a boil. Return the stuffed lotus seeds and longan to the pot and cook until boiling. Skim off any foam. Taste and adjust the sweetness to your preference.
