Boil tomatoes and beetroot and allow it to cool down

In same water cook veggies except onion

Make fine paste of beetroot and tomato.heat pan add ghee now add onion and saute.add veggies.(do not over cook maintain crunch of veggies).

Saute for couple of minutes add beetroot puree mix well add salt, black pepper, lemon juice.cook for five minutes.serve hot.it is low in carbs.tasty and healthy.one medium bowl is sufficient for a person.

I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I think putting then to oven make taste better. Rae -

Leftovers leftovers leftovers. I made smothered chicken last night. My recipe is on Cookpad. I used all my rice last night but I did have half a bag of egg noodles. Dug in the freezers and found frozen partial bags of peas and corn lol par for the course with me. Beef stew Beef stew
I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. Props to my hubby as well for the photography as usual!! kokomayla
