Steps

Heat olive oil in Medium heat until a few drops of water sizzle when sprinkled on pan.

Add Onion and Bell peppers and stir fry for 5 min

Add chopped tomatoes and season to taste. Mix and let cook for 5 more minutes or until tomatoes have released water and the mixture is thick

Add 2 eggs, whisk together, turn off heat and let sit in place for 2-3 minutes

Toast bread and serve on toast.
