Chop onion, carrot, celery and panchetta. Place in blender and blend

Warm a pot on low heat and add 4-5 tbsp of olive oil

Add the blended mix. Stir and simmer for 10 mins

And beef and pork. Break down as it cooks

Add salt, oregano and the white wine and simmer in 5-10 mins. Stir regularly

Add tomatoes/passata and pepper. mix well

Add the water, mix well, and cover.

Simmer for 60-90 mins. Check every 10 mins and stir. (Can cook for additional hours)
