I made this back in June for my wedding anniversary, but I love it so much I could eat it every day on hot summer days! It's got it all: tasty, super-easy, healthy, no need for hob or oven 😋

I made this back in June for my wedding anniversary, but I love it so much I could eat it every day on hot summer days! It's got it all: tasty, super-easy, healthy, no need for hob or oven 😋

Chop all the vegetables and the bread, and put into a bowl. Season well with salt and pepper, olive oil and the vinegar and leave to marinade for at least 30 minutes (the more the better though!)

Put everything into a blender and whiz until smooth. Then adjust consistency and seasoning to your liking and chill in the fridge.

Serve really cold with a few slices of chorizo (or without if you want it veggie!) and 2 leaves of basil.
