Prepare the ingredients. Mash the boiled potatoes, then add the flour, yeast, sugar, and a drizzle of olive oil. Add the warm water and salt, and knead until smooth.

Cover the dough and let it rise for 2 hours.

Place the risen dough in a baking pan. Top with potato slices about 1/4 inch thick. Season with salt, pepper, and a drizzle of olive oil. Let rise for another 40 minutes.

Add rosemary. Bake in a convection oven at 400°F/375°F (200°C/190°C) for 25-30 minutes.
