Ingredients

Serves 4 servings
  1. 4 cupsall-purpose flour (about 500 grams)
  2. 1 1/3 cupsboiled potatoes, mashed (about 200 grams)
  3. 1 1/4 cupswarm water (about 300 grams)
  4. 1 packetdry yeast
  5. as neededOlive oil,
  6. 1 teaspoonsugar
  7. as neededSalt,
  8. Topping
  9. 2potatoes, thinly sliced
  10. Salt
  11. Pepper
  12. Rosemary
  13. Let rise for 2 hours, plus 30-40 minutes in the pan

    Prepare the ingredients. Mash the boiled potatoes, then add the flour, yeast, sugar, and a drizzle of olive oil. Add the warm water and salt, and knead until smooth.

    Cover the dough and let it rise for 2 hours.

    Place the risen dough in a baking pan. Top with potato slices about 1/4 inch thick. Season with salt, pepper, and a drizzle of olive oil. Let rise for another 40 minutes.

    Add rosemary. Bake in a convection oven at 400°F/375°F (200°C/190°C) for 25-30 minutes.
