Ingredients

  1. 300 grChinese eggplant, cut into pieces
  2. 1 tspsalt
  3. 2 Tbspcornstarch
  4. 3garlic cloves, minced
  5. 1 inchginger, crushed
  6. 2 Tbspvegetable oil
  7. 1/2 Tbspsesame oil
  8. Sauce ingredients: (mix well in a small bowl)
  9. 1 Tbspsoy sauce
  10. 1/2 Tbspdark soy sauce
  11. 1 Tbspoyster sauce
  12. 1 Tbspgarlic chili paste
  13. 2 Tbspwater
  14. 1 tspsugar
  15. 1/4 tspground pepper
  16. 1 tspcornstarch

Cooking Instructions

  1. 1

    Soak the eggplant in a bowl filled with water that has been given 1 tsp of salt. Cover the bowl. Let stand for 30 minutes. Drain well. Dry with paper towels.

    Mix the eggplant with cornstarch. Stir well.

  3. 3

    Heat the vegetable oil in a skillet over high heat. Fry the eggplant until cooked and browned. Remove from the heat. Set aside.

    Turn down the heat a little. Heat sesame oil. Sauté garlic and ginger until fragrant.

  5. 5

    Put the eggplant back in the skillet. Stir it up.

  6. 6

    Pour the sauce mixture (stir it well before pouring it). Stir well. Adjust to taste. Remove from the heat.

    Serve over warm white rice. Yum 😋
