Preheat the oven 180c, gas mark 4, 350f.
Place the sugar in a bowl and use electric beater whisk in a high speed together with eggs 5-6 minutes until light and fluffy.

Add the vanilla extract and continue whisking for more 2 minutes.
Gently fold in sieved flour, in about 3 betches.

Pour sponge-cake mixture into a well greased flan tin.
Bake in a pre-heated oven for around 10-12 minutes or till a skewer inserted in the centre comes out clean and allow to cool completely.

Decorate with the cream,custard and top with your favourite fruit.
