Ingredients

Serves 5 servings
  1. Ingredients for marinating the pork
  2. 1 1/2 lbspork loin (about 650 grams/23 oz)
  3. 1 teaspoonfinely chopped ginger
  4. 1 teaspoonsalt
  5. 1 tablespoonsoy sauce
  6. Other ingredients
  7. 1beaten egg
  8. 2 cupscornstarch (about 250 grams)
  9. 1green bell pepper, cut into squares
  10. 1red bell pepper, cut into squares
  11. 2 cupspineapple, cut into cubes
  12. Green onions, thinly sliced
  13. Vegetable oil for frying
  14. Sweet and sour sauce
  15. 1 teaspoonvegetable oil
  16. 1 teaspoonchopped garlic
  17. 1 teaspoonchopped ginger
  18. 1 tablespoonbrown sugar
  19. 1/2 cupketchup (120 ml)
  20. 1/2 cuppork or chicken broth, or water (120 ml)
  21. 1/2 tablespoonrice vinegar
  22. 2 tablespoonsrice wine
  23. 2 tablespoonssoy sauce
  24. 1/2 tablespooncornstarch

    METHOD
    Measure and cut all the ingredients for the recipe.

    MARINATE THE PORK
    Pork is a relatively tender meat. You can use any cut as long as you trim off the fat and sinew.
    Pat the meat dry with paper towels and cut into cubes about 3/4 inch (2 cm) square.
    Mix the pork with ginger, salt, and soy sauce. Let it marinate for about 1 hour.

    MAKE THE SAUCE
    In a small bowl, mix all the sauce ingredients except the oil, garlic, and ginger.
    In a small pot, heat the vegetable oil over medium heat and sauté the garlic and ginger.
    Add the rest of the sauce ingredients and mix well. Let it simmer for a couple of minutes after it comes to a boil. Set aside.

    PINEAPPLE
    Cut the pineapple in half lengthwise.
    With a sharp knife, cut around the edges of one half.
    Cut the center at an angle to remove the tough core.
    Scoop out the rest of the flesh and cut it into cubes.

    FRY THE PORK
    After the pork has marinated for 1 hour, coat the cubes well with cornstarch. Shake off any excess cornstarch.
    Add the beaten egg and mix.
    Coat the pork cubes again with cornstarch.
    Heat a wok with vegetable oil for frying.
    Fry the pork cubes until golden brown. Set aside on a platter.

    Discard the used frying oil.
    Clean the wok and heat it with a splash of vegetable oil.
    Stir-fry the green and red bell peppers.
    Add and stir-fry the pineapple cubes.
    Add the sauce and mix well.

    Add the pork cubes and heat through. Add green onions.
    Serve immediately.
