Hot chilli jam
Very hot, a bit sweet and will last for ages
Steps

Put the sugar and fresh chillies in a pot and put over a medium high heat, stirring occasionally until the chillies soften and the sugar begins to brown

Add the vinegar, fish sauce, dried chillies and salt. Bring to a simmer. You probably will need to add a little water at this point, just enough to give it some space to move

Add the rest of the ingredients and simmer until thick
