Ingredients

45 minutes
4 to 5 bowls
  1. 3 tbsolive oil
  2. 1chopped onion
  3. 4chopped garlic cloves
  4. 1red chilli chopped
  5. 2medium carrots peeled and chopped
  6. 1medium ribs celery chopped
  7. 3-4baby corn -sliced
  8. 1zucchini chopped or sliced
  9. 1small potato cubed
  10. 1 cuptomato puree
  11. 1 tbstomato sauce
  12. 3-4 cupsVegetable stock
  13. 1/2 tspdried oregano
  14. 1/2 tspdried thyme
  15. 1/2 tspchilli flakes
  16. 1/2 tspblack pepper powder
  17. 1/2 cupsoaked barley or rice or pasta
  18. 1/2 cupwhite beans (optional)
  19. as needed Salt
  20. as requiredBasil leaves
  21. as required Cheese garlic breads

Steps

  1. 1

    Take all Vegetables in a dish

    In a pan heat oil and saute onion,garlic,celery and red chilli. Then add oregano, thyme,chilli flakes, black pepper powder abd mix well

    Then add all the chopped Vegetables and saute them for 3 to 4 mbts.

    Then add tomato puree and mix well.cook it for 2 minutes

    Add vegetable stock and then soaked barley and salt. Mix well and cover it with lid and let it cook for 6 to 8 minutes on a slow flame or until all Vegetables and barley get cooked properly.

    Stir in between. Once done,switch off the flame,pour the soup in a bowl, garnish it with basil.Serve hot with crusty bread.
