Lachha Rabdi

Lacha Rabdi is a popular north Indian dessert , made with boiling or simmering full-fat milk at slow flame until it thickens. During simmering process ,cream or lachha which is formed on the top of boiling milk ,is collected to the sides of the pan with spatula and in the end this whole collected milk is added to the reduced milk.

In a heavy bottom pan or in a nonstick pan,boil the milk on medium flame,stir in between.

Stick all the cream or lachcha to the sides of pan.Continue doing it until the milk reduces to its half.

Peel the skin of almond. Now keep aside few soaked dryfruits for garnishing and grind other dryfruits with a tablespoon of milk to make a paste.

After that add sugar and soaked dryfruit paste in the milk and let it boil for another 5 to 7 minutes.Then add Cardamom powder and mix well.Scrap all the lachha from the sides and add in the milk.Let the milk come to room temperature. Serve in a bowl and garnish it with chopped dryfruits
