This beetroot salad is an all in one dish with a mixture of root vegetable that can be called a plate of sunshine. Beetroot salad is very popular in Mauritius, a perfect picnic meal that can be eaten on it own or with some crusty bread. I had to share this recipe in my book as it's one salad that remind me of big family picnics when everyone will bring a different dish and all will be laid out and shared. Childhood memories.
You can add hard boiled eggs to the salad.

Ingredients

15 minutes
2 servings
  • 2fresh beetroot
  • 1large potato
  • 2medium size carrots
  • 1small shallot - thinly sliced
  • 2 Tbsextra virgin olive oil
  • 1 tspcider vinegar
  • to tasteSalt
  • Freshly ground black pepper
  • 1 tspseasoning soy sauce (optional)

Steps

15 minutes
  1. 1

    Start by boiling or steaming the vegetables. If boiling place a pan of water to heat, bring to the boil, season with salt and cook the vegetables leaving the skin on.

  2. 2

    Cook until softened but still firm. To check if cooked using a sharp knife piece in one of the vegetable if it goes in smoothly you know the vegetable is cooked.

  3. 3

    Meanwhile prepare a vinaigrette with the rest of the ingredients. Place all the ingredients in a bowl mix and leave to marinate while vegetable is cooking.

  4. 4

    Once the vegetables are cooked drain and leave to cool down before peeling.

  5. 5

    Peel the cooked vegetables, thinly slice them.

  6. 6

    Place on a large mixing and sprinkle the vinaigrette over.

  7. 7

    A little advice: add the vinaigrette to the sliced vegetables while they are still warm.

  8. 8

    Leave to rest until the vinaigrette totally immerse into the vegetables.
