Mix flour and butter until resembles bread crumbs, add curd cheese, 20 g icing sugar 1 egg and 50 ml sour cream. Knead until you get a nice soft dough. Roll it out on a lightly floured work surface and form finger sized dumplings.

Generously butter a pie dish and sprinkle biscuit crumbs over it. Cook dumplings in boiling water and when they rise to the top drop them in melted butter then transfer them into your buttered dish. Turn your oven on for 180c, and prepare the cream.

Separate 3 eggs and beat the egg whites with a pinch of salt. Beat the egg yolk with the 60g icing sugar, 200ml sour cream and lemon zest. Gently combine it all with raisins and the egg whites. Pour the cream over dumplings and bake for 25-30 minutes. Sprinkle with vanilla sugar. Enjoy
