Nibuta (Stewed Pork) Shoyu Ramen

This is my favourite classic Tokyo-style ramen. It takes time to stew the pork, but the steps are so simple.

This is my favourite classic Tokyo-style ramen. It takes time to stew the pork, but the steps are so simple.
Steps
- 1
Tie the meat with kitchen string, then place it into a deep pot. Pour the water till the meat is almost covered.
- 2
Pour Sake or white wine, Soy sauce, and oyster sauce. Add garlic, ginger and leek.
- 3
Cook over high heat until boiling. Skim the scam off the top, then turn into low heat.
- 4
Simmer with a lid for 50 -60 min. Meat should turn tender enough to be stubbed by chopstick smoothly. Cool down to room temperature, then take out the meat. Slice into 5mm thickness. Set aside.
- 5
This cooking liquid can be Ramen soup. But the broth might be too salty as a soup, so add water or chicken broth for your taste.
- 6
Boil ramen noodles as instructed on the package.
Drain the water and place the noodles in a big bowl. Pour the soup.
Add the sliced meat on top and scratch small pieces of green onions. - 7
If t is difficult for you to find the ramen noodles, you can substitute pasta spaghettini or fedelini. Try to boil the pasta with 1 -2 tbsp of baking soda.
