Delightful Pink Beetroot Cookies

October is the Breast Cancer Awareness Month (BCAM). It is celebrated every year and various events are held to promote awareness of this disease using PINK as a symbol.
In honour of this PINKtober, I am sharing my recipe of
💖 Pink Beetroot Cookies 💖
that is super Delicious and packed with goodness of Healthy Beetroot!
Beetroot, a very popular Superfood, is loaded with numerous health benefits such as:
● Rich in Calcium, Iron, Vitamin A and C.
● High source of Folate (Vitamin B6) that is good for the heart.
● Contains Antioxidants which protect the cells and lower the risk of cancers.
● A great source of Fiber too.
● High in immune boosting vitamin C.

Steps

First of all, prepare beetroot puree, wash, peel and chop the Beetroot. Then pressure cook with just enough water to 3-4 whistles or until soft. Cool it completely and make a thick puree(use little water if required).

In a bowl, sift flour, baking powder and salt. Keep aside.

Now blend butter, sugar and vanilla essence (I used food processor). Add Beetroot puree too and Mix everything well.

Add this wet mixture to dry ingredients and mix it well to make a semi-thick consistency mixture. (The dough should be sticky).Cover and refrigerate for 30 minutes.

Pre-heat the oven at 180°C and pour the above mixture in a Piping bag and put nozzle of your choice.

Grease and dust the baking tray with some flour. Pipe the above mixture in shape of cookies. Keep a distance of 1 inch between the the cookies as during baking it'll rise.

Bake it for 10-12 minutes at 180°C or till bottom of cookie is golden brown.

Once cooled, store in an air-tight container. Enjoy!
