Crush the peperoncino, add it to the pan, and fry together for a spicy kick.
- 4
Add the cooked pasta to the pan, along with 2 ladles of pasta water, and mix well.
- 5
Toss in the water dropwort and wild chive, turn off the heat, and lightly mix using residual heat to wilt the greens.

- 8
Serve the pasta on a plate and top with extra Grana Padano cheese to finish.

Tips
1. Greens wilt quickly, so stir-fry them briefly and mix lightly to preserve their flavor and appearance.
2. For tougher greens, blanch them for about 30 seconds before using.
3. Add a sprinkle of lemon zest at the end for an extra refreshing twist.
