Steps

Preheat the oven to 150 oC
In a large bowl mix together the oats, lemon zest and poppy seeds - 2
In a small pan place the lemon juice, honey/maple syrup and coconut oil
Gently heat until melted and mixed together
Pour into the dry ingredients and mix until the oats are coated - 3
Spread out on a baking tray and bake for 15 minutes
Stir oats and return to the oven for another 15 minutes - 4
Remove from the oven and allow to cool
Store in an airtight container
