Sabudana Kheer

Sago/ Sabudana is made from tapioca roots also known as cassava. Sabudana is pure starch and is a processed food. In India sabudana is widely used as a fasting food as it gives instant energy boost. Sabudana is considered to reduce body heat and balance the body temperature. Making kheer with sabudana is easy and takes less time to cook. For me it took 35 minutes to cook the sabudana kheer as the pearls I used were very small and swelled up in 40 minutes. Kheer of sabudana is creamy and delicious. It's a dessert best enjoyed when chilled.

Wash 3 - 4 times the sabudana and soak in 1/2 cup of water for 1 hour.

Heat milk in a heavy bottomed pot.

When the milk comes to boil add the soaked sabudana and saffron strands.

Simmer the milk with sabudana and saffron till the milk thickens and sabudana are cooked (35 - 45 minutes).

Keep stirring in between. Add sugar and cardamom powder and mix well.

Garnish with cashews and cranberries and serve hot or chilled.
