I HATE broccoli. I've never been able to enjoy it. However, since I have a young daughter and want to set a good example, I tried to make this vegetable more appealing. Well, we loved this pesto!

5 ozbroccoli (145 g)
1/2 cupfresh basil leaves (15 g)
2.8 ozpancetta (80 g)
7almonds
1-2 tablespoonsolive oil
2 tablespoonsgrated Grana Padano cheese (15 g)
1 tablespoonolive oil
1 pinchsalt
Pecorino crisp for garnish (1 oz pecorino cheese, 30 g)
2 slicesmultigrain bread

Wash and trim the broccoli, removing the stem and setting aside the florets. Blanch the florets in boiling water for about 5 minutes. Then drain and transfer them to a bowl of ice water to keep their bright green color. Once cooled, drain in a colander and pat dry with paper towels to remove excess water.

In a tall blender cup or food processor bowl, add the basil leaves, almonds, Grana Padano, olive oil, a pinch of salt, and the broccoli. Blend until you get a creamy pesto.

Cook the square spaghetti in boiling salted water. Meanwhile, brown the pancetta in a skillet (do not add oil or other fats). Set aside a few cubes for garnish; mix the rest into the pesto. To make the pecorino crisp, melt the cheese in a skillet until it forms a crisp.

Toast the multigrain bread and then pulse it in a food processor to make breadcrumbs.

Once the pasta is cooked, toss it with the broccoli pesto, breadcrumbs, pancetta cubes, and pecorino shavings.
