Cut the vegetables into small pieces. Heat a little oil in a pan, add the vegetables, and cook for about 10 minutes. Add salt at the end of cooking.

Beat the eggs, then add the slightly cooled vegetables, grated cheese, and breadcrumbs as needed.

Heat a nonstick skillet with oil. Pour in the mixture and cook over low heat with a lid. Flip halfway through cooking.
