Ingredients: 1 cup, chopped ripped mango; 2 banana peel, scoop the inside out; 1 cup brown sugar; 4 clove garlic, finely chopped; 1 tsp chilli powder or paprika; 1 tbsp garam masala; 1 tbsp minced ginger, finely chopped; 1 tbsp stem ginger, finely chopped; 4 tbsp vinegar; 1 cinnamon stick; 2-3 tbsp water

I experiment using banana peel in this mango chutney and it came out really nice!! I use slow cook technique as this is a challenge set up from Cookpad UK this week. It’s so effortless but the result turn out very effectively delicious!! Great slow cooking technique as you just throw everything in the slow cooker and it do the job for you. I use banana peel inside the skin and it thicken up the chutney nicely as well.

Ingredients

1cup, chopped ripped mango
2banana peel, scoop the inside out
1 cupbrown sugar

1 tbspstem ginger, finely chopped
4 tbspvinegar
1cinnamon stick
2-3 tbspwater

Steps

Put all the ingredients together in a slow cooker.

I set mine to cook for 5 hours and occasionally stir them a couple of times.

After 5 hours in slow cooker it came out lovely and soft but there will be some big pieces so I use potato masher and mash up the big pieces of mango and stir them well again. Leave it to cool down and store in a clean jar. Delicious with popadoms and as a dipping sauce.
