It's been a long time since I had bubur candil. Finally, I was able to make it with purple sweet potatoes😁
It's chewy and I made a version that's not too sweet, so it's not overwhelming.

Steps

Steam the sweet potatoes until soft, peel, and mash until smooth. You can mash them with a fork or a pestle wrapped in plastic.

Add tapioca flour and salt. Knead until well combined and the dough can be shaped.

Shape the dough into small balls (about 5 grams each).

Add water, sugar, salt, and pandan leaf to a pot, stir, and heat until hot (but not boiling). Add the biji salak balls.

Dissolve 5 tablespoons of tapioca flour in 8 tablespoons of water. Once the biji salak is boiling and the balls start to float, add the tapioca flour mixture. If it's not thick enough, you can add more tapioca flour mixture. Stir until thickened.

Make the coconut milk sauce by mixing water and coconut milk (stir well). Add pandan leaf and salt. Stir gently until cooked. Set aside.

Place the bubur candil in a bowl, then pour the coconut milk sauce over it. Ready to serve😋
