Basic Homemade Tomato Sauce

I don't like using store-bought sauces. I've found that it's best to have a basic sauce that works for many dishes. This one is very simple—just prepare the tomatoes and cook them. I use it for pizza, pasta sauces, and stews.

I don't like using store-bought sauces. I've found that it's best to have a basic sauce that works for many dishes. This one is very simple—just prepare the tomatoes and cook them. I use it for pizza, pasta sauces, and stews.

Wash the tomatoes, cut them in half, and remove the core (the white or greenish part where the stem attaches). This part can taste a bit bitter and can give the sauce a yellow-green color that isn't as appealing.

Dice the tomatoes into small cubes (about 1/2 inch or 1 cm).

Heat the olive oil in a pot. When hot, add the whole garlic cloves, let them release their aroma, then add the diced tomatoes.

Add a little salt to help the tomatoes release their juices. Remove the garlic cloves. Bring to a boil with the pot uncovered. Add the bay leaf or oregano. Cook for about 15 minutes over high heat. Then lower the heat and cover the pot.

Stir occasionally to prevent sticking. When you can see the bottom of the pot and there's no liquid left, the sauce is ready. You can blend it with a blender or immersion blender if you like.

Pour the hot sauce into a sterilized jar and store it in the refrigerator. Your all-purpose sauce is ready.
