Ingredients

4 people
  • 1 kgbeef poulet (cubed, 2x2 cm) or roasted vegetables
  • 5onions (coarsely chopped)
  • 5cloves
  • 8Juniper berries (bruised)
  • 200 ggingerbread (crumbled)
  • 250 mlkitchen vinegar
  • 4 tbdutch apple syrup
  • 3bay leaves (laurel)
  • 2red chillies
  • To taste
  • 1 dashsea salt
  • 1 dashground black pepper

Steps

  1. 1

    Leave the meat outside the fridge exactly one hour before frying it.

  2. 2

    Chop meat and vegetables.

  3. 3

    Fry half of the meat on high until seared and repeat for other half. Then set aside.

  4. 4

    In a different pan, fry onions and chillies on med-high in butter until onions start to caramelize.

  5. 5

    Add vinegar and wait until it has become warm before adding it to the steak.

  6. 6

    Add bay leaves, Juniper berries, salt and pepper.

  7. 7

    Make sure that the meat is covered in liquid by adding hot water if necessary.

  8. 8

    Close the lid and simmer for at least 3 hours before removing Juniper berries.

  9. 9

    Mix in apple syrup and crumbled ginger bread.
