Turn pressure cooker to Saute and add the oil. Quickly brown the chicken for about 1-2 mins per side. Do one pc of chicken at the time. Remove to a plate.

Add the onions and fry for 3-4 mins until just browning on the edges then add the garlic, cook for 2 mins.

Add the chicken stock and "deglaze" the bottom of the pot then add olives, limes and the tomatoes & Harissa heat until simmers. Add back the chicken. Put on lid and pressure cook for 12 mins on high. Allow to naturally pressure release.

Adjust the salt and pepper, put into serving disk or Tagine sprinkle with coriander and serve with Moraccan Batbout (naan Bread) Cous Cous, Rice, Mash Potatoes - well anything to soak up all those amazing juices. ENJOY :P
