Mum's vermicelli dish

Mum used to make this for our breakfast - it is a vermicelli dish eaten cool, drizzled with sweet fish sauce. She had a lot more ingredients than I did - dried shrimp, lap cheung, carrots, bean sprout. For mine, I only had vermicelli, fried egg, gai lan and fish sauce.

Boil chinese broccoli, then drain with cold water.

Boil vermicelli, drain with cold water.

Mix 2 eggs, pour mixture into a pan and spread out evenly flat. Fry on low heat. Cut egg into thin strips.

Fish sauce mixture: 3 tbs fish sauce, 2 tsp sugar (dissolve with 2 tsp of boiling water), 1 tsp vinegar, chopped fresh chili (opt)

Combine all together: vermicelli, vegetable, egg and fish sauce.
