Heat oil in a kadai.

Add bay leaf, cumin seeds, black cardamom and dry red chilli for seasoning.

Add the chana daal.

Now add all the ingredients except leftover vegetables.

Saute for 5 minutes on a medium flame.

Add 2 cups water and cover the lid.

Boil chana daal for 20 minutes on a low flame.

Now add the leftover vegetables and stir.

Sprinkle ghee before serve.
