First, let the butter soften at room temperature.

Place all the ingredients into the bread machine pan in this order: 2 whole eggs and 2 yolks, pour in the milk, add the sugar, the softened butter cut into pieces, and a pinch of salt. Add the vanilla sugar or seeds from the vanilla bean, the tablespoon of honey, the bread flour, and finally the dried sourdough starter dissolved in a little water.

Start the bread machine on the dough and rise program. Begin the first kneading and let it rise for a bit. Let the program run for 90 minutes.

After the first 90 minutes, stop the program and restart it from the beginning for a second kneading and rising cycle. Let it run for another 90 minutes, then stop.

After the second cycle, add the candied fruit and raisins (previously soaked in water, or even better, in Moscato or rum), and start the program again for a third kneading.

After the 27-minute kneading cycle, the dough should be smooth and elastic. Remove it from the bread machine, divide it in two if you want two 1.1 lb (500 g) panettones, or shape it into one ball for a single 2.2 lb (1 kg) panettone. Place the dough into the panettone mold and let it rise for at least 3 hours, until it nearly reaches the top of the mold.

Preheat the oven to 350°F (180°C). Cut a cross on top of the panettone with a knife and place a small piece of butter in the center of the cross. Bake for 45 minutes, then remove from the oven. Enjoy the wonderful aroma!
