This pickled green chilies taste sweet, sour and lightly spicy especially if you use jalapeños. Mostly served with noodles or fried rice as condiment and our mexican dishes. Can be used as pizza topping, in burger or sandwiches. Last a month or more, refrigerated. Always use a clean dry spoon to scoop the pickles out from the jar.

Discarding the seeds from the chilies is optional.

Ingredients

  • A. Pickle Solution
  • 1/2 cupwhite vinegar
  • 1/2 cuphot water
  • 1 cupsugar
  • 1/2 tspsalt
  • B. Blanching
  • 1 1/2 cupthinly cut green chilies
  • As needed- boiling water
  • As needed- cold or iced water

Steps

  1. 1

    A - In a bowl, stir and mix everything in A well until sugar is dissolved. Keep aside. Note: Using hot water is to dilute the sugar and salt. Leave it to cool before adding the vinegar.

    B - Cut green chilies. Prepare a bowl of cold water in a bowl. Put aside. Next, place enough water for blanching in a pot and bring to a boil. Turn off the heat once it reaches boiling point. Blanch cut green chilies in the hot water for 5-8 seconds. Drain and discard the hot water and immediately transfer chilies to a bowl of chilled or cold water. Leave in cold water for 20 seconds. Drain and discard water.

    Pickling - Pour pickle solution into a clean glass jar or sterilized pickle bottle. Spoon chilies into the jar. Pickle is ready after 24 hours.
