For peanut masala: Heat some oil in a pan, add 1/2 cup peanuts, urad dal, sesame seeds, desiccated coconut, dry red chillies, and fry it for 3-4 mins on a low flame until you get a nice aroma.

Allow the mixture to cool down and make a coarse paste of it without adding any water.

Heat some more oil in a pan, add the mustard seeds, once it splutters, adds few curry leaves, hing, and the remaining peanuts, fries it until the peanuts start to crackle.

Next add the cooked rice, tamarind pulp and salt to taste, gently mix it well.

Next add the peanut masala, gently coat it well with the rice, cook it for 2-3 mins, add some ghee, switch off the flame and cover and allow it rest for few minutes before serving.
