In a bowl or container, add the flour and all the other ingredients.

Or, if you prefer, use a clean surface and gradually mix in the warm water (make sure the water is warm, not hot, or the dough will get sticky). Knead until you have a smooth dough, about 10 minutes. Cover and let rest for about 30 minutes so it doesn't dry out. After resting, form small balls of dough.

Lightly flour a flat surface so the dough doesn't stick. Shape each ball into a disc with your hands, then roll it out with a rolling pin until it's very thin—almost see-through. Dust the rolling pin with flour to prevent sticking.

While you roll out the dough, heat the oil. Once the oil is very hot, add the buñuelos one at a time, flipping so both sides cook. When they're golden brown, set them aside. (I cooked them on low heat so I had time to roll out the rest.)

For the syrup, combine the water, piloncillo, and cinnamon in a saucepan. Cook over low heat until the piloncillo dissolves, stirring occasionally. Let it simmer for 5 more minutes, then turn off the heat. The syrup is ready.

To serve, drizzle the syrup over the cooled buñuelos and enjoy with your special person.
