Mix water, sugar in a bowl, then add cake gel in it and beat it till it gets soft white peaks.

Then add oil, essence, to it and mix for 1 min on low speed.

Then add all dry ingredients and mix it, don't overbeat it.

Grease the pan with oil and put the batter in the pan and keep it in OTG for 30 mins.

Fresh and spongy mango cake is ready to serve.
